It's our nod to success, rebellion, freedom, and ongoing pursuit of the American Dream (with an added sense of confidence and style of course).
Let’s pop the hood on this Cadillac and talk winemaking. Lay Low Paso is a harmonious blend crafted with meticulous attention to detail. We start with 61% Syrah grapes sourced from Pear Valley Vineyard on the east side of Paso Robles. The silty clay and clay loam soils, with decomposed calcareous material, allow the Syrah to retain its natural acidity and ripen to perfection, resulting in velvety textures and supple tannins. To add backbone and juiciness, we incorporate 34% Petite Sirah sourced from the Templeton Gap District. Finally, a touch of floral notes and refreshing acidity comes from 4% Négrette and 1% Sangiovese, sourced from certified organic vineyards – Calleri Vineyard (Négrette) and Wheeler Vineyard (Sangiovese) in San Benito County.
All the grapes were destemmed and fermented in stainless steel tanks and bins for 20-35 days on the skins. After pressing, the wine aged for 20 months in neutral French Oak barrels, allowing the flavors to meld seamlessly and create a truly remarkable experience.
