For this sexy little number, we let the skins and seeds marinate, if you will, with the juice a little longer than usual for white grapes (in this case 7 days). This is more of a red wine style of winemaking, but we think we came up with something pretty mind-blowing. This technique enhances the texture and flavor of the wine giving you a more compelling, complex wine to sink your teeth into. You’ll also notice the ripe peach nose, accentuated with loads of floral and lemon aromatics, flows right to the palate almost as if you nose never left the glass…yeah we aren’t kidding.
We designed this label as a tribute to our “sly fox” winemaker, Bertus van Zyl (pronounced Fun Sail), whose crafty vision inspired this originally unplanned for wine. Bertus approached us right before harvest with a passionate idea to try something different with some unique Italian varieties “he had stumbled upon” up in the Sierra Foothills AVA. He presented his case for the wine and even though we had not planned for an extra white wine, we were intrigued. So we gave him the green light to proceed, even though it pushed us over our planned budget for the 2015 harvest. Yep!
Our fox is back in the lab, concocting the next masterpiece.
