Your tongue will moan with pleasure after one sip of Fever Dream, a 2021 Mixed Whites Pét-Nat from Saureel Vineyard in the Sierra Foothills. Unlike other sparkling wines like Champagne, Prosecco and other domestic bubbles, Fever Dream is made using old-school methods – bottling the juice while it's still fermenting and allowing nature to do its thang.
Let's talk for a minute about why we're absolutely obsessed with this winemaking style. There's something inherently wild about the tiny, delicate bubbles one can only find in pétillant natural wine. Since we're utilizing the grapes' natural microflora, the resulting wine is exotically aromatic, crisp and totally unconventional.
We believe that some of the best grapes in California are found in the Sierra Foothills, and Saureel Vineyard is the ideal growing site for high acid white varieties like the Picpoul and Vermentino found in Fever Dream. High in elevation with rich volcanic soils, the scorchingly hot days and cool nights help develop intense flavor, structure and puckering acidity, which is exactly what we were looking for with this wine. We co-fermented the Vermentino and Picpoul for a smooth and integrating effect and bottled the wine when it reached ideal sugar levels to allow the fermentation process to finish in the bottle and naturally carbonate the wine.
Going with our au natural look, we bottled this tantalizing wine unfined and unfiltered to preserve every drop of its magical goodness. So, in case you were wondering, yes it is supposed to look like a lemon-hazy kaleidoscope of light in the bottle. Embrace it. You'll soon find that we bottled liquid sunshine, adorned with celestial bubbles that taste like you're drinking the stars themselves.
On the nose, you'll get delicious whiffs of citrus, white peach, and those sweet tarts we used to stuff into our pockets when roaming the aisles at the corner store (😏...you didn't?). In your mouth, it's got those lemon head and pixie stick kinda vibes mixed with an almost vanilla-like creaminess that perfectly compliments the frothy bubbles. This wine is absolutely delicious (and low in alcohol!), so we suggest scoring a haul of bottles to last you through the summer before this sucker sells out for good.
In the spirit of shedding inhibitions and embracing a never-ending summer mindset, our label features a bodacious 🍑 kissed by the sun from our artist friend Poppy Faun. Poppy's unique collage art captures a message of escapism through a retro 1960s and 1970s aesthetic.
