2019 Come, Saints and Sinners

We wanted to do something never done before...and it's completely sinister.

Come, Saints and Sinners is a Carbonic Macerated 100% Petite Sirah Pétillant Naturel sparkling wine made from the legendary Rorick Heritage Vineyard in Calaveras County, California.

This project came to be after our winemaker, Bertus, spent the night at the house of Forlorn Hope's Matthew Rorick. The two started riffing on doing something crazy and the more we thought about it, the more we couldn't resist it.

Situated 2,000 feet in elevation in limestone soil, Petite Sirah from Rorick Heritage Vineyard is renowned for its beautiful aromatics, texture, and bright acidity.

To kick this off, we employed Carbonic Maceration, a process where we put whole clusters of grates into tanks and pump in carbon dioxide to remove oxygen. The Petite Sirah begins to release an enzyme that converts the grape sugar into alcohol, bursting the berries without adding additional yeast. After 5 days, we moved the grapes to press.

Next, we used the "méthode ancestrale" to make this a sparkling wine the OG French way, by bottling the juice before the first fermentation completed, allowing the native yeast to create delicate bubbles inside the bottle. Wines produced in this fashion are often called Pét-Nat wines.

When we first started checking on this wine, we knew we had a unicorn on our hands. It's like Pop-Nat made out with a Cherry Otter Pop while Love Now More Than Ever watched. Come, Saints and Sinners is ungodly special. Big cherry and juicy strawberry fizzes with brisk minerality, and hints of nectarine and citrus. Our resident Somm, Aaron, compares it to an Italian Lambrusco made in a frizzante style. It's interesting, but not too weird. Complex, but so damn drinkable. Honest to god, this is one of the coolest wines ever produced by Tank Garage Winery.

We only bottled 69 cases of this special wine, and if you needed one last reason to covet this wine, we also decided to painstakingly hand-label every bottle.
